It was time to clean out the leftovers in the fridge. One member of the family wasn’t interested in eating, having gone for her COVID booster. I finished the noodles from noodle night. Grins.
We were in a hurry before leaving for the three hours of DoorDash we do as a side hustle. Throwing Beyond Meat meatballs after covering them in barbecue sauce into the air fryer meant we had to time to eat.
Taco salad. We’ve been trying to add more vegetables to our meals, so this is a perfect way to do it. Smiles. Peppers, onions, Daiya cheese, vegan ground beef, lettuce, and salsa.
Noodle night. Whole wheat spaghetti. The family has meat sauce, but I don’t have it due to my kidney disease. I added vegan butter and Daiya cheese to mine. Smiles.
Dinner is tofu with noodles. It sounded perfect, and I’ve been trying to add more tofu into our meals. The processed vegan food works for when we want to eat something quick, but the sodium causes my kidney to ache. Tofu doesn’t do this.
I’m late to post my dinner photograph due to playing Halo Infinite after doing deliveries in the wind. It was not an enjoyable experience. Power outages, trees down, debris in the road, etc. Dinner was Gardein chicken nuggets with peppers and corn. I’ll post the winter images tomorrow.
I craved a cheese sandwich. It was perfect for dinner. As usual, these are made with Daiya cheese since it’s vegan. Grins.
The cook (me) wanted a hamburger. Beyond Meat makes awesome vegan hamburgers, and we have them often. I added lettuce and barbecue sauce to enhance the flavor.
I’ve said it before, Tuesday is noodle night. This week it’s spaghetti. The family had meat sauce, but I don’t have any since it’s something I’ve been told to not have because of my kidney disease.
